So I take a common brand and I've been using it for a long time. I recently saw they have a new version that is 5x strength! Like, the same as time 5 of the normal kind. How do we know if we're taking too much?

There's really no "too much" as far as probiotics. Most of it dies before it gets to the bowels, so generally the more the better. VSL#3 has 900 billion probiotic bacteria per dose..no one is dropping dead from it. Similarly with kefir which has trillions of bacteria per cup.
