A person (19 years old) very important to me complains about having headaches almost daily.
Additionally, memory problems seems to be very frequent, forgetting what wanting to say all the time or plans for the day or the week.

Sleep patterns vary around 10 hours.

Additionally, endless coughing and very frequent ear infections at winter.

Taking multi-vitamins, iron, omega-3, omega-6 and omega-9, what can be suggested to improve?

Check to see if iron is sufficient. Excess Iron can be bad if the body has sufficient iron.

Magnesium & B-12 should be a good start.

Diamond V (does Epicor work ?) may help with the sleep.

Is a low carb diet possible ? or how about taking coconut oil ?

Has this person had a thorough blood test done ?
