I think one reason researchers use mice is because everyone else uses mice. The infrastructure is in place and mice are convenient, and alternatives are limited.
Meanwhile, mice are sensitive creatures: they react differently to male and female researchers (males stress them out and alter hormone levels); they react differently when music is playing, and to different types of music. That is, to a mouse, mice love Eek-a-Mouse:
